Sweet and Saucy Meatballs

These meatballs are delicious as a main course served over rice (as pictured) or speared with a toothpick and served as appetizers. They are made with 94% lean turkey meat and are deceivingly low in calories and fat. After the first bite, PJ made the face he only makes when he really likes something. Success!


INGREDIENTS:
Meatballs:
1/4 cup chopped onion (1/2 of a very small onion)
1 pound 94% lean ground turkey
1 egg white
1/4 cup seasoned dry bread crumbs
1 teaspoon dried thyme
1 garlic clove, pressed
1/2 teaspoon salt

Sauce:
8 ounces jellied cranberry sauce
1/4 cup ketchup
1/4 cup orange marmalade (I substituted a combo of apricot preserves and blueberry jam because that's what I had)
2 tablespoons packed brown sugar (I made my own with white sugar and molasses because that's what I had)
1 tablespoon Worcestershire sauce (I used soy sauce)

DIRECTIONS:
Preheat oven to 400 degrees. In a medium bowl, combine all of hte ingredients for the meatballs. Mix gently but thoroughly (with hands is fine).

Using a small scoop (cookie dough scoop works the best) or with two small spoons, shape meat mixture into balls. Place in a single layer over the bottom of a pyrex baking dish. Bake 15 minutes and drain any liquid if there is any.

Meanwhile, in a small bowl, combine all the ingredients for the sauce. Pour sauce over meatballs and mix gently to coat evenly. Return to oven. Continue baking 15 minutes. Stir gently before serving.

Serve over rice for a main course or spear with toothpicks and serve as appetizers.

Yields about 40 meatballs
Serves 6-8 for a main course.
