Easy Pizza Margherita

Pizza Margherita is so quick and easy. Since there is very little skill or work involved, the pizza is just as good as the ingredients you can find. The freshest and best quality mozzarella, tomatoes, basil, and pizza dough will make a big difference.  Even with very good ingredients, this pizza is still only about $10 or less. The basic method is to roll out the dough and bake it plain for about 8 minutes to make it crispy. While it's in the oven, slice the cheese and tomatoes and then compile everything and bake for about 10-12 minutes more.

Pizza Patate

In my short stint as a baker at Sullivan St. Bakery, I couldn't get enough of this potato pizza. I've been craving it long enough that I finally (somewhat resentfully) caved in and bought Jim Lahey's cookbook. Let's face it, he can cook. I wasn't able to get it as crispy as he does on the top, most likely because I couldn't wait the hours of soaking time to eat it, but I'd suggest following his instructions for soaking the potatoes and try to remove as much water as you can from them in order to get crispy potato topping.

Pizza with Ricotta, Fennel, and Arugula

This is a nice white pizza for a weekday meal since it comes together quickly, and PJ can eat it because it has no red sauce. I've always avoided making home-made pizza because I have trouble with pizza dough, so this time I used store-bought and it was so much easier. If you have the knack for it, feel free to make your own dough!
