Honey-Soy Salmon with Mango and Kiwi



Here's one to add to the short list of dinners P.J. and I both like! This was so quick to make, very healthy, and it really doesn't even need the rice.

Honey-Soy Salmon with Mango and Kiwi
Adapted from Cooking Light

INGREDIENTS:
1 tablespoon honey
2 teaspoons soy sauce
1 teaspoon olive oil
1/4 teaspoon black pepper
3/4 pound salmon, cut into two fillets
Cooking spray

1/4 of a mango, peeled and diced
2 kiwis, peeled and diced
1/4 cup cilantro, washed and chopped
1/8 cup orange juice
DIRECTIONS:
Combine first four ingredients in a large ziploc bag. Add fish and seal; marinate for 10-20 minutes in the refrigerator.
Heat a large non-stick skillet over medium-high heat. Remove fish from bag, discarding marinade. Coat pan with cooking spray. Add fish, and cook 5 minutes on each side or until it is cooked through.
 While fish is cooking, prepare the fruit relish by combining the mango, kiwi, cilantro, and orange juice in a small bowl. Serve over fish.

  1. I agree - ate this and this alone for a couple meals. I also found that the salmon worked nicely leftover the next day as a sandwich filling without the fruit.
